Autumn is fungi season so this is the best time to forage for edible mushrooms. Spend a day in the woods learning to find, identify and prepare edible plants, seeds, nuts, flowers and fungi that grow wild at this bountiful time of year.
One day Foraging will give you a great insight into the wealth of seasonal wild foods available in the British countryside. Throughout the year we find wild salads and edible greens, forage for flowers, herbs and wild berries, pick hedgerow fruit and wild mushrooms.
Discover the wide variety of edible seaweeds and plants on the beautiful Yorkshire coast. Forage in pools and gullies and around the pretty village of Robin Hood’s Bay. Lunch will be cooked with local and foraged ingredients and there will be dessert and hot drinks too.

Our one day cider making course is a day of immersion in to the world of cider: chopping, pressing, brewing and bottling.
Learn how to plan and build your own earth oven, from the importance of the dimensions to the mix of the cob. On this course we will build an earth oven in the woods and cook pizza in an existing oven in the barn.
Learn the skills needed to skin and carefully butcher a deer. Our expert tutors will take you through the stages needed to turn the whole animal into joints, mince and sausages. Everyone can take part and there will be a venison joint and some sausages for all to take home.
Learn the artisan skills needed to create the most delicious bread. You will learn to make Sour Dough, Ciabatta, Foccacia, and many other styles. Baking will be in our wood fired earth oven in which you will also cook pizza for lunch. Prepare to be inspired Tom Baker knows his stuff.
Bring out your inner Caveman: The Cooking with Fire course will give you the knowledge to cook all sorts of food from snacks to impressive dinners using wood fires. We will give you the rules of successful fire building and the trick of getting it to light first time!

A ‘hands on’ day using the ancient skill of food smoking to create arrange of delicious products, from traditional smoked salmon to the more unusual items like smoked popcorn and smoked olive oil. The day will cover both hot and cold smoking as well as pre-curing and salting.
