Meet Your Guide

Chris Bax is one of England's most recognised wild food experts, bridging the gap between ancient foraging traditions and contemporary cuisine. Together with his wife Rose, he founded Taste the Wild in 2008 to transform how people think about the edible landscape around them.
What makes Chris distinctive is his rare combination of professional culinary training and deep outdoor expertise — blending the refined palate of a chef with the practical knowledge of a seasoned outdoorsman. This dual perspective allows him to elevate wild ingredients beyond rustic simplicity into sophisticated culinary experiences.
Operating from Todmorden in Yorkshire's Calder Valley, Chris has partnered with prestigious venues including Castle Howard and Devonshire Estates, trained professional chefs, and worked with groups ranging in age from 5 to 90 and background from merchant banking to herbalism.

Join us for immersive guided walks through woodland, meadow, and coastline. Learn to identify, harvest, and appreciate wild edible plants in their natural habitat.

From beginner to advanced, our courses cover plant identification, seasonal foraging calendars, preservation techniques, and wild food cookery.

With 15 years of experience, we offer professional training and consultancy in live fire cooking — covering fire-building, heat control, and the many techniques available when using flames, coals, and smoke as ingredients. Whether you're a chef, a food business, or a hospitality team, we can help you unlock the drama and flavour of cooking with fire.

We build bespoke foraging apps for landowners, estates, and rural businesses. Using GPS mapping and plant identification, we chart the wild food growing on your land and deliver it to guests or staff through a beautifully designed app — yours to brand and own. Guide users directly to seasonal ingredients, learn what grows where, and unlock the natural larder on your doorstep.
