Cooking with fire is an excitingly elemental skill that can produce great food in the outdoors. This course explores some of the many cooking techniques available to us when cooking with flames and coals. In our own private wood we teach you the skills needed for cooking with fire. The emphasis of this course is on using different techniques to create new and interesting meals outdoors.
This winter, inspired by the great Argentinian chef Francis Mallmann’s ‘seven fires’ we are creating a clearing dedicated to the art of cooking over an open fire. The area will be covered allowing us to teach in all weathers and use a wider range of cooking with fire techniques. This exciting new resource will be up and running for all our 2018 courses.
There is a lot of cooking and eating on this course: Our morning snack, our lunch and an afternoon snack are all cooked using fire in different ways. You will be fully involved with the days’ activities using newly acquired skills to build fires and cook with them.
Building, lighting and controlling a cooking fire is crucial to creating delicious outdoor food and the course covers this in detail. We also look at different types of wood to burn for the ultimate outdoor food.
This course is designed to give you the confidence and skills to light a fire and use it to cook great meals and snacks when you are out in the countryside.
Cooking with fire is about heat, drama, excitement and ultimately delicious food, but safety and environmental awareness are vital and we will give you advice on all these things.
The course provides ideas and inspiration whether you are travelling light in the wilderness or you have access to outdoor kitchen equipment.
