This is an old post revamped. A selection of the wonderful dishes we have had served up at our Gourmet foraging course ‘Wild about food’ at Swinton park hotel over the last couple of years. The day commences with a foraging walk in the 120 acre parkland surrounding the castle, with diverse habitats and excellent tuition the grounds usually yield some great wild edibles. After our foraging mission we return to the Swinton park cookery school for a wonderful four course lunch based on seasonal wild foods.
