Yorkshire Masala Chai

In November The Guardian published an article on how you could beat the cold this winter - but my favourite Masala Chai wasn't included.

Ingredients

  • 20 Cardamon Pods
  • 8 Cinnamon Sticks
  • 8 Star Anise
  • 8 Cloves
  • 16 Peppercorns
  • 1tsp Fennel Seeds
  • 2 tbsp Ginger - Grated
  • 1 Nutmeg
  • 200g Loose Black Tea Leaves
  • 100g Honey

Method

Sticky Chai Mix: crush 20 cardamon pods, 8 broken cinnamon sticks, 8 star anise, 8 cloves and 16 peppercorns in a pestle and mortar into small pieces. Add 1 tsp fennel seeds, 2 tbsp grated ginger, 1 finely grated nutmeg and 200g loose black tea leaves into a bowl, mix together. Add 100g warmed honey and mix until all ingredients coated. Store in a jar. Masala Chai: add 1 generous tsp sticky chai mix and 2 tsp boiling water to a pan on low heat, stir 30 seconds. Add 1 mug of milk and simmer 5 mins. Strain into mug. Add extra honey if desired.
