Elder Rob Ice cream

A lovely recipe which combines elderberry fruit, spice and cream to make an unusual winter dessert.

Ingredients

  • 2lb Elderberries
  • 1 cup of water
  • Half a tsp of Allspice
  • Half a tsp of Ground Ginger
  • 1lb jar of local honey
  • 300ml milk
  • 300ml double cream
  • 3 egg yolks
  • 200g sugar
  • 100ml elder rob

Method

Elder Rob: strip 2lb elderberries from stalks, simmer in 1 cup water for 15 mins. Press juice through sieve into pan, add 0.5 tsp allspice and 0.5 tsp ground ginger. Sterilise bottles. Simmer 10 mins, add 1lb honey, stir until dissolved. Bottle. Ice cream: mix 3 egg yolks, pinch salt and 200g sugar until pale. Heat 300ml milk until nearly boiling, pour onto egg mix and whisk. Add 300ml cream and 100ml elder rob. Cool. Churn or freeze stirring hourly.
