Seaweed scones

Seaweed scones with cream cheese and smoked salmon - a great marine flavour hit.

Ingredients

  • 12g dried Bladderwrack ground
  • 7g dried Gutweed ground
  • 2g fine sea salt
  • 60g Butter
  • 250g S.R. Flour
  • 2 tsp Baking powder
  • 1 Egg
  • 150ml Milk

Method

Makes about 14-16. Preheat oven to 220C. Grind 12g dried bladderwrack very small. Mix 7g dried gutweed finely ground with 2g fine sea salt for topping. Sift 250g SR flour and 2 tsp baking powder into bowl. Rub in 60g butter until fine breadcrumbs. Add bladderwrack. Break 1 egg into jug, make up to 150ml with milk. Add wet ingredients to dry, mix to a soft dough. Press out to 2cm depth, stamp out with 4cm cutter. Brush tops with milk and sprinkle with gutweed/salt mixture. Bake on greased baking sheet for 8-10 mins. Cool on rack. Serve with smoked salmon and cream cheese.
