Rosehip syrup

Rosehip syrup made mid October when the rose hips are as red as possible.

Ingredients

  • 500g clean ripe rosehips
  • 650g sugar
  • 1tsp citric acid

Method

Makes about 1.75 litres. Chop or blitz 500g rosehips. Boil 800ml water, add rosehips, bring back to boil, cover and remove from heat. Infuse 15 mins. Strain through jelly bag into a jug - leave to drip 1 hour. Save pulp. Put strained juice in fridge. Boil another 800ml water, add rosehip pulp, bring to boil, infuse 15 mins, strain again and leave dripping overnight. Combine all juices (about 1 litre). Add 650g sugar and 1 tsp citric acid. Bring to boil stirring, boil 2-3 mins. Bottle in warm sterile bottles.
