Rose petal cordial

This delicious cordial is so easy to make and is ready in just two days.

Rose Petal

Ingredients

  • 150g well scented rose petals
  • 1 litre water
  • 1 kg sugar
  • 1 lemon zested and sliced
  • 35g citric acid

Method

Rose Petal Cordial - makes 1.7 litres. Boil 1 litre water and pour into a large sterilised container. Add 1 kg sugar and stir until dissolved. When warm but not steaming add 150g well scented rose petals, 1 zested and sliced lemon and 35g citric acid. Stir, cover. Stir twice a day for two days with a very clean spoon. After two days strain through muslin into jug and bottle. Keeps up to 1 month in fridge or freezes well.
