Patxaran

This is a very complexly flavoured alternative to sloe gin that I first drank in a beautiful hunting lodge in the Spanish Pyrenees.

Ingredients

  • 1 litre dry aniseed flavoured alcohol
  • 250g sloes
  • 2 tbsp sugar
  • stick of cinnamon
  • 6 coffee beans
  • 1 tsp camomile flowers
  • 3 strips dry orange peel

Method

Put 250g sloes, 2 tbsp sugar, 1 stick cinnamon, 6 coffee beans, 1 tsp camomile flowers and 3 strips dry orange peel into a large screw-topped jar. Add 1 litre dry aniseed flavoured alcohol (arak, raki, ouzo or vodka with 4 tsp aniseed). Seal and shake well. Leave in a cool dark place for 3-4 months, shaking occasionally. When ready to bottle, strain through a fine sieve or muslin, fill bottle and cork until ready to drink.
