Nettle soda bread

A simple and nourishing wild bread made with stinging nettles.

Ingredients

  • 500g Plain flour
  • 2 tsp bicarbonate of soda
  • 1 tsp salt
  • 400ml live yoghurt or buttermilk
  • 2 large handfuls of nettles (blanched, drained and chopped)

Method

Mix 500g plain flour, 2 tsp bicarbonate of soda and 1 tsp salt in a bowl. Add 400ml live yoghurt or buttermilk and 2 large handfuls of blanched, drained and chopped nettles. Bring together to form a dough. Do not knead. Form into a dome on an oiled baking tray or in a dutch oven. Bake 20 mins on a camp fire or 30 mins in oven at 180C / gas mark 4.
