Hedgerow Fruit Jellies - Great sweets for Christmas gifts

Every year I buy boxes of fruit jellies at Christmas time. This year, I wanted something more personal and healthy.

Elderflower, Sloe, Blackthorn, Sea Buckthorn

Ingredients

  • 70g Sea Buckthorn berries
  • 70g Blackberries
  • 70g Elderberries
  • 70g Sloes
  • 2 large Bramley Apples, peeled cored and chopped
  • 300g Granulated Sugar + extra for dusting
  • 1 tbsp lemon juice
  • 3 heaped tsp pectin powder

Method

Remove stalks from 70g each: sea buckthorn berries, blackberries, elderberries, sloes. Wash berries. Put in pan with 2 large peeled chopped Bramley apples, 1 tbsp lemon juice and 1 tbsp sugar. Cook 25 mins until soft. Push through sieve - about 400ml pulp. Cool. In a dry bowl mix 300g granulated sugar and 3 heaped tsp pectin powder. Add cooled fruit pulp, whisk, heat to boil whisking constantly. Boil briefly, pour into lined tray. Set completely cold, cut into squares and coat in granulated sugar.
