Hawthorn and Mugwort Ketchup

A lovely wild ketchup that's not too sweet. Great with cold meats and game.

Ingredients

  • 500g Hawthorn berries
  • 10g dried Mugwort leaves and flowers
  • 300ml white wine vinegar
  • 300ml water
  • 170g sugar
  • Salt and pepper

Method

Wash 500g hawthorn berries and put in a pan with 10g dried mugwort, 300ml white wine vinegar, 300ml water. Simmer 40 mins until berries are tender and colour has come out. Press through a sieve into a clean pan, add 170g sugar. Bring to the boil and cook 5 mins. Add salt and pepper to taste. Bottle in sterilised bottles or jars. Makes approximately 500ml. Note: Mugwort should not be consumed by pregnant ladies.
