Ground Elder Spanakopittes

Spanakopita is a traditional Greek Spinach and Feta cheese pie. In these little Spanakopittes I am using Ground Elder and Hedge Garlic.

Hedge Garlic, Ground Elder

Ingredients

  • Half a carrier bag of young Ground Elder
  • A handful of young Hedge Garlic leaves
  • 1 onion, skinned and chopped small
  • 1 tablespoon olive oil
  • 1 egg, beaten
  • Ground black pepper
  • 125g Feta cheese, crumbled
  • 135g Filo pastry sheets
  • 50g butter, melted

Method

Remove large stalks from half a bag of young ground elder. Heat 1 tbsp olive oil and soften 1 chopped onion 5 mins. Add ground elder, cook 5 mins. Add a handful of hedge garlic leaves, cook 2 mins. Cool, then mix in 125g crumbled feta, 1 beaten egg, black pepper. Cut 135g filo pastry into 5cm strips. Brush strips with 50g melted butter. Place 1 tsp filling at end and fold into triangles. Brush with butter and bake at 220C for 15 mins until golden.
