Spanakopita is a traditional Greek Spinach and Feta cheese pie. In these little Spanakopittes I am using Ground Elder and Hedge Garlic.

Hedge Garlic, Ground Elder

Half a carrier bag of young Ground Elder
A handful of young Hedge Garlic leaves

1 tablespoon olive oil
1 egg, beaten
Ground black pepper
125g Feta cheese, crumbled

Cool, then mix in 125g crumbled feta, 1 beaten egg, black pepper. Cut 135g filo pastry into 5cm strips. Brush strips with 50g melted butter. Place 1 tsp filling at end and fold into triangles. Brush with butter and bake at 220C for 15 mins until golden.
