Ground Elder croquetas

One of our favourite comfort foods. Crispy coated parcels of melting cheese and wild herbs.

Wild Garlic, Ground Elder

Ingredients

  • 75g Butter
  • 75g Plain flour
  • 450ml Milk
  • 250g Strong cheddar cheese, grated
  • 50g Young Ground elder leaves and stalks chopped finely
  • 1tbsp olive oil
  • 1 egg, beaten
  • 100g stale white breadcrumbs
  • Salt and pepper
  • Oil for deep frying

Method

Makes 12. Melt 75g butter, add 75g plain flour and cook 1 min. Gradually stir in 450ml milk, cook until thick. Add 250g grated strong cheddar and 50g finely chopped young ground elder leaves. Stir, cover, cool completely. Shape into 12 small sausages. Dip each in beaten egg then 100g breadcrumbs. Deep fry at 185C for 2-3 mins until golden. Drain and serve warm.
