For your hip flask - Sloe Gin and Wild Liqueurs

Sloe gin is the classic tipple for your hip flask, but over the last few years we have been making new wild liqueurs.

Sloe, Blackberry, Damson

Ingredients

  • 1.25 kg sloes or damsons
  • 250g sugar
  • half tsp almond extract
  • 1.65 ltr gin

Method

Sloe Gin: Wash and prick 1.25kg sloes/damsons. Put in large jar with 250g sugar, 0.5 tsp almond extract (alcohol-based), and 1.65 ltr gin. Stir hourly until sugar dissolved, then daily for a week, then weekly until ready (around Christmas). Strain through fine mesh, bottle. Blackberry Whisky: 75cl blended whisky, 200g blackberries, 100g sugar. Leave in dark place for a month, shake weekly. Strain and bottle. Cherry Brandy: 700g wild cherries halved (leave stones in half), 700ml brandy, 150ml vodka, 200g sugar. Leave 2 months, shake weekly. Strain and bottle.
