Elderflower wine

This is my recipe for Elderflower wine. I have made wine this way for the last 15 years and it always works well.

Ingredients

  • 1 pint of elderflowers
  • 3 lemons - grated rind and juice
  • 1 gallon of water
  • 2.5lb sugar
  • 2 campden tablets
  • 1tsp yeast
  • 1tsp yeast nutrient
  • 1tsp tannin
  • 1tsp potassium sorbate
  • Finings

Method

Makes 6 bottles. Day 1: Put 1 pint elderflowers and grated rind of 3 lemons in bucket. Pour over 1 gallon boiling water, cool, add 1 crushed campden tablet. Days 2-4: stir twice daily. Day 5: strain, add lemon juice, 2.5lb sugar, stir to dissolve, add 1 tsp yeast, nutrient and tannin. Days 6-9: ferment at 20C. Day 10: transfer to demijohn with airlock. Day 25: siphon off sediment, add campden tablet and potassium sorbate, add finings, leave to clear. Day 50: bottle when clear.
