Elderberry, Blackberry and Apple Spiced Rum

Remove the stalks from the fruit, wash it and gently pat it dry. Now add everything to a large Kilner jar and store in a dark cupboard for around 3 weeks.

Ingredients

  • 400g Blackberries
  • 400g Elderberries
  • 200g under-ripe apples quartered
  • 2 x 700ml bottles of golden Spiced Rum
  • 100g sugar
  • juice of half a lemon

Method

Add 400g blackberries, 400g elderberries, 200g quartered under-ripe apples, 2 x 700ml bottles of golden spiced rum, 100g sugar and juice of half a lemon to a large Kilner jar. Label with contents and date. Store in a dark cupboard for 3 weeks, swishing contents every few days. Taste after 3 weeks - if flavour is good, remove fruit and strain. Add extra sugar if desired.
