Dandelion and Burdock cordial

A classic foraged cordial using roots from the hedgerow.

Ingredients

  • 1/2 oz wood avens roots cleaned and chopped
  • 2 oz dandelion roots cleaned and chopped
  • 2 oz burdock roots cleaned and chopped
  • 1/2 oz root ginger chopped
  • 1 pt water
  • 1/2 tsp citric acid
  • 4 oz Demerara sugar

Method

Place 0.5 oz wood avens roots, 2 oz dandelion roots, 2 oz burdock roots, 0.5 oz ginger, 1 pt water, and 0.5 tsp citric acid in a pan. Boil for 20 minutes. Strain through muslin and stir in 4 oz Demerara sugar until dissolved. The cordial will keep in the fridge for a couple of weeks. Best diluted with chilled soda water.
