Seaweed tartar sauce

The quantity and quality of seaweed on the North East coast has been particularly good this year.

Sea Lettuce, Laver, Seaweed, Dulse, Carrageen, Kelp, Fungi

Ingredients

  • 50g chopped mixed seaweed
  • 4 tblsp mayonnaise
  • Lemon juice to taste

Method

Seaweed tartar sauce. Mix 50g chopped mixed seaweed (include some pepper dulse for its garlicky taste), 4 tbsp mayonnaise and lemon juice to taste. Mix all ingredients together and serve with white fish. Foraging rules for seaweed: always harvest living seaweed attached to rocks, not washed up; cut with scissors leaving the holdfast; no coastal seaweeds in Britain are poisonous; be aware of tides and weather; check water quality of area.
