Method
Mix 550g self raising flour, 0.5 tsp bicarbonate of soda and 0.5 tsp table salt together. Add 280ml buttermilk and 280ml whole milk to form a wet batter. Add more flour if you want a firmer dough but keep it wet for the lightest bannocks. Do not over mix. With plenty of flour on your worksurface, scoop out a quarter of the mixture. Sprinkle with flour and work into a round with floured hands. Transfer to a heated griddle with no oil or butter. Cook 5 minutes on each side until risen and deep brown.
