Acorn and apple tea bread

If you can find some acorns ( they are thin on the ground this year) this is a nice one for Sunday afternoon tea.

Ingredients

  • 225g (8oz) S R Flour
  • Pinch of salt
  • 5ml (1 tsp) Mixed Spice
  • 100g (4oz) Soft butter or marg
  • 100g (4oz) Caster sugar
  • 2 Eggs
  • 15ml (1tbsp) Golden syrup
  • 100g (4oz) Sultanas
  • 100g (4oz) chopped processed Acorns
  • 1 medium Cooking Apple peeled, cored and chopped

Method

Process acorns: peel, boil 15 mins, drain, boil again 15 mins, drain, peel skins, chop, cool. Sift 225g SR flour, salt, 1 tsp mixed spice. Beat 100g butter and 100g sugar, add 2 eggs and 1 tbsp golden syrup. Fold in flour, 100g sultanas, 100g processed acorns, 1 chopped cooking apple. Bake in a lined loaf tin at 180C for 1 hour then 170C for 20 minutes.
