Cook: 10 mins
Pine, Juniper, Cep

Ingredients

  • Pine can be a very strong flavour and adding too much will turn your delicious recipe into something that smells and tastes more like a cleaning product!
  • When picking needles Make Sure you do not pick from the Yew tree, which is very poisonous!!

Method

Pine Tincture: blend 20g fresh green Scots pine needles with 100ml vodka, infuse 30 minutes, sieve. Chocolate coated Pine creams: mix 200g icing sugar, 1.5 tbsp pine tincture, 1 tsp glycerine, 1 tbsp water into a firm dough. Roll into balls, set aside to dry, then coat in melted dark chocolate (150g). Two words of caution: Pine can be a very strong flavour. Do not pick needles from the Yew tree, which is very poisonous.
