Making natural skin and hair care products

On this course Rose will introduce you to the fantastic array of wild plants that can help your hair and skin. You will make natural skin and hair products using wild flowers, leaves and roots.

Create your own natural shampoo, bath salts and bath bomb, learn how to make an infused oil and create a lip balm and a salve. The day will be a mixture of demonstrations by Rose and plenty of hands-on experience. You’ll have all your products to take home and the skills to make more.

The course runs from 10.00am until 1.00pm on 12th April, at Pilmoor Grange, close to our wood in North Yorkshire. We will be in a beautiful stone and oak barn and there will be heaters but it would be advisable to wear warm clothes and comfortable shoes and to bring an apron. Course materials, herbal plant guide sheets and recipe sheets are provided for each student as well as tea, coffee and biscuits. Full directions are given when you book. Places are limited to 8 people.

Cooking in an outdoor oven

We have designed this course to give you a large repertoire of dishes to cook in your outdoor oven. Everyone cooks pizza but how about a perfect joint of meat, succulent baked salmon, pies, breads, roasted vegetables and sweet treats.

Course Description

A real taste of outdoor cooking. During the day Chris will teach you how to cook great dishes that will make the most of your outdoor oven. The course is run at the barn, in our wood in North Yorkshire. This enables us to cook in two ovens exploring recipes that need a high heat and those which need longer slower cooking.

Chris has created dishes that show a variety of cooking techniques from roasting a big centrepiece joint to slow cooking a casserole. We will create fabulous fast food in minutes and carefully craft pastries that take a little longer – all these things can make your outdoor meals memorable and delicious.

The day will be a mixture of demonstrations from Chris and plenty of hands on cooking sessions. Please dress for a day in the outdoors and bring an apron, thank you.

There is a lot of cooking and eating on this course: Our morning snack, our lunch and an afternoon snack are all cooked in the earth ovens. (Unfortunately we cannot cater for special dietary requirements on this course.)

The course will look at different types of outdoor ovens from gas powered to wood fired. We will look at choices of wood for burning and how to control and monitor the temperature of your outdoor oven.

Food Hygiene is an important concern and this will also be covered on the course.

Vegetarian wildfood cookery

We have designed this course to showcase wild edible plants at their best. The seasons are short for wild food but whichever course you choose there will be fantastic wild ingredients to cook with. This hands on course is great for all who love cooking.

Course Description

This course is held in the barn on our own woodland site in North Yorkshire. Most of the wild ingredients will have been collected in advance but there may be a little foraging still to be done. During the day Chris will demonstrate some dishes that really make wild ingredients sing. There will be plenty of hands on cooking sessions. You will learn how some wild ingredients can be used to enhance dishes that you know well and how they can inspire completely new recipes.

The course also looks at sustainable foraging techniques, the legalities of foraging and how to keep on the right side of the law.

Summer winemaking

Learn about winemaking and take home your own wild flower ‘Champagne’ and a wild liqueur. This 14th June day course gives you a fun day of learning and a vineyard tour, 5 litres of flower champagne in a fermenter, a wild liqueur, a picnic lunch and some wines and country tipples to taste! 8 places only. New for this year we have course all about wine making: starting with a vineyard tour we find out how award winning wines are made and sample a couple made from Yorkshire grapes. We will collect some wild flowers and blossoms and enjoy a picnic lunch. Then at our woodland barn Rose will explain the craft of country wine making, guiding you through the processes and giving you tips on winemaking at home. Everyone will start off some wild flower champagne to take home and a wild flavoured liqueur. There will also be tastings of some of our own country flower wines and liqueurs, plus recipes to take home too.

Wild Plants for First Aid and Wellbeing

You wouldn’t believe the healing properties of so many of our native wild plants. This course will show you how to identify and use over 30 of the plants in our woods and hedgerows. We are lucky to have Sarah Hughes Medical Herbalist teaching along with our very own Rose. The day is held in our private wood and involves short walks and talks, demonstrations and some hands on experience making herbal remedies. Together we will be making herbal ointment and a hair tonic for you to take home, poultices for you to try and detox drinks and teas for you to taste. There will be hot drinks supplied and a light lunch of Wild greens soup and herb bread. Places are limited to 12
Sarah Hughes lectures part-time at Newcastle University on the MSc in Medicinal Plants and Functional Foods and is a truly inspirational teacher. She will show us plants that are pain killers, plants that heal wounds, even a plant that cures a nose bleed!
That’s in the morning, then after lunch we look at the benefits that can be gained by using wild plants in your daily life from natural sleep remedies to immunity boosters and a hair strengthener.

Cooking with coastal wild food

This course will give you real taste of coastal wild food. The day encompasses fish and shellfish preparation and shows you some really delicious ways to use seaweeds as fabulous new ingredients. Join us at the Wolds Cookery School for inspirational recipes to cook and delicious dishes to try.

Course Description

The course is run at the Wolds cookery school which allows us to explore some more refined recipes than we could do over an open fire in the woods. Chris has created dishes that make the most of the wild foods we forage at the coast and delicious seasonal fish. He will teach you some great core cookery skills looking at fish and shell fish preparation, and the processing and cooking of seaweed and other foraged ingredients.

The day will be a mixture of demonstrations from Chris and plenty of hands on cooking sessions in the schools beautiful teaching kitchen.  Lunch will be cooked as part of the course and you will also take away a goody bag and a comprehensive set of recipes for all the dishes.

The Wolds cookery school, near Driffield provides us with all we need for a fabulous day of cooking and eating. (Unfortunately we cannot cater for special dietary requirements on this course.)

The course will run from 9.30am until 4.00pm and will include delicious wild food lunch cooked as part of the course.

Cider Making

Our one day cider making course is a day of immersion in to the world of cider: chopping, pressing, brewing and bottling. 

We visit the local cider making cooperative and learn how different types of apples are used to create a good flavour balance and see the techniques used to produce a great quality product. The apple chopping machine and press will be in action and we can help in the apple juicing. Our guide Cameron Smith has a wealth of knowledge and experience. He will explain processes and techniques with us and we will be able to see how the village community produces enough cider to fund lots of local projects.

We have lunch back at the barn in our wood and taste some local ciders. The afternoon is spent with passionate homebrewer Steve, he will show you how to make reliably great cider on a small scale in your own kitchen. You’ll learn about different types of cider making equipment from the very basic household items to more purpose made devices — and have a go at using it. Steve will share his tips and techniques to make successful cider and give everyone a step by step guide. Along with the guide you will take home a 5 litre fermenter full of apple juice an airlock and yeast...all ready to turn into cider

The course starts at 10.00am and finishes at 4pm. The course will run in Taste the wild’s woodland kitchen. (Nr Boroughbridge, North Yorkshire) directions will be sent with course booking confirmation. We will have a 15 minute drive to our local cider makers in the morning.

The cost of the course includes:-  All tuition, lunch,  cider tastings,  5L apple juice, a fermenter, an airlock and yeast.
