A Deer in a Day Butchery Course

Learn the skills needed to skin and carefully butcher a deer. Expert butchers Colin and Alan will take you through the stages needed to turn the whole animal into joints, mince and sausages. Everyone can take part and there will be a venison joint and some sausages for all to take home.

Hot and Cold Smoking Course

A ‘hands on’ day using the ancient skill of food smoking to create arrange of delicious products, from traditional smoked salmon to the more unusual items like smoked popcorn and smoked olive oil. The day will cover both hot and cold smoking as well as pre-curing and salting.

Back to Basics Bread Making Course

Learn the artisan skills needed to create the most delicious bread. You will learn to make Sour Dough, Ciabatta, Foccacia, and many other styles. Baking will be in our wood fired earth oven in which you will also cook pizza for lunch. Prepare to be inspired Tom Baker knows his stuff.

With over forty years of experience between them traditional butchers Colin and Alan have a passion for meat products that is hard to find in modern times. Together they run Huttons meat and game butchers in North Yorkshire producing their own award winning bacon, sausage, pies and puddings.

Tom is a superb teacher with a wealth of knowledge about bread. He set up ‘Loaf’ a social enterprise in Birmingham in 2009 which aims to promote food and healthy living within the community. He teaches bread making courses at his community bakery. You may also have heard him on BBC Radio 4.
